Level IV: Spotlight Series
Fee: $675
Prerequisite: In order to be eligible to attend the Spotlight Series, all attendees must be have completed Levels I, II and III.
Synopsis: The world of food is going through a dramatic shift. Restaurant customers are more aware of the food that they eat, differences in quality, the impact that food has on their health and well-being, and most importantly the source of ingredients.
As educators it has become increasingly important for us to understand and deliver the message of sustainability and how future cooks and chefs can develop stronger relationships with farmers and local producers.
The 2012 Summer Institute at New England Culinary Institute will focus on understanding farmer/producer relations, greening your kitchen, meat and fish fabrication, preparing farm-to-plate menus, artisan bread baking, building a palate for artisanal cheeses and even the process of coffee roasting and selection.
Designed for the teacher with strong foundational kitchen skills, this workshop week will use the Vermont Agricultural Landscape as a classroom.
